1..Add oil,Onion seed,salt,sugar.Mix well.
2..Make a dough(like puri dough)
3..Make twisted butterfly
1..Make a thin roti.
2..Cut into small strips.
3..take one strip at a time.
4..fold it into half.Twist at the center to make butterfly like shape.

4..Deepfry these butterflys.

1..Soak urad daal into water for 2-3 hrs.Grind n make a thick paste.

1..Make a fine batter of dahee.Addsalt,sugar,ginger juice.Stir well

METHOD FOR MAKING KATORI (BOWL)



Make a stiff dough of maida with 3-4 tbsp oil and salt. Divide into 15 equal parts, roll into thin rotis and prick with a fork all over. Heat oil in a kadahi. Grease the outside of a medium size steel bowl. Take one roti, stick on the outer side of the bowl so that it takes the shape of the bowl. Put in the hot oil along with the steel bowl. Remove the steel bowl as soon as it separates. Fry the bowl-shaped roti to a light brown color. Prepare all the katoris similarly and keep aside.



INGREDIENTS FOR FILLING


Curd (beaten) 500 gms Onions (chopped) 2
Masala Chhole 1-1/2 cup Urad Dal ke vade (bhalle)-small 15
Tamarind Chutney 1-1/2 cup Maide ki Papdi 30-40
Sprouts (boiled) 1-1/2 cup Bhujia (sev) 100 gms
Boiled Potatoes (chopped) 4 Coriander Leaves (chopped) 1 cup
Roasted Dhaniya Powder 2 tsp Chat Masala 2 tsp
Roasted Jeera Powder 2 tsp Garam Masala 1 tsp
Plain Salt and Rock Salt 1 tsp each Red chilly powder 1 tsp



METHOD FOR SERVING



Dip a katori in the curd and put in a serving plate. Fill with vada (bhalla), crushed papdi (2-3), one tbsp of chhole, one tbsp of sprouts, some potatoes and onions. Pour two tbsp of curd and one tbsp of tamarind chutney. Sprinkle all the masala to taste. Garnish with bhujia and coriander leaves.



Makes: 15 plates.

Delhi chaat is nothing but small bowls of puris filled with chaat masalas and other chaat stuff.You have to put whole bowl into you mouth like a pani-puri when you eat it.
Its my favourite.Though its time consuming to prepare.Worth to taste.
It tastes awsome when the bowl of puris melt into your mouth with a punch of chaat masalas. hmmmmm Yummmyyyyyy!!!!

Deep fry it.So that it becomes Crispy.

INGREDIENTS

Bread slices 10
Ginger small piece 1
Curd 250 gm
Mustard seeds (small) 2 tsp.
Coconut (fresh)
Oil 6 tbsp.
Green chilly 2
Kari patta 20-25

METHOD

Tie the curd in a muslin cloth for 4-5 hours to make it thick. Grate the coconut. Finely chop the green chillies and ginger. Add coconut, salt, green chilly and ginger to the curd. Mix well. Now take 2 slices of bread. On one slice spread the mixture of coconut and cover it with the second. Take a tava and heat 1 tbsp. of oil. Add a few mustard seeds and 2-3 kari patta. Now put the bread on the tava. Brush lightly with oil. Turn it. Put oil on the second side. Turn it twice or thrice till crisp. Remove from flame. Cut it into triangular shape. Serve hot with coriander chatni and sauce.

Serves: 4-5 adults.

Type 10 Aloo Paneer Sandwich
Ingredients :

4 bread slices
1potato, boiled
7-8 paneer pieces
1 onion, chopped
2 green cillies
½ tsp red chilli powder
½ tsp chat masala
Salt to taste

Method :

Smash the potatoes, cut the paneer to smaller piece and mix the above ingredients well (except bread).
Place the mixture between two slices of bread, add some butter and toast it in a toaster.
Tasty sandwich is ready.

Type 11 Carrot Sandwich

Ingredients :
¼ kg carrots
2 onions
2 tsp ginger, Green Chilli paste
2 tomatoes
Salt-as required.
Oil for frying.
10 bread slices
2 tbsp chopped mint, coriander,
curry leaves

Method :

Steam cook carrots and grate them.
Chop onions and tomatoes finely.
Heat little oil, and little mustard and then ginger garlic paste.
After a minute add onions and fry till it becomes crispy.
Stir in tomatoes and continue frying till moisture is absorbed.
Add grated carrots, salt, chopped leaves and fry well.
Keep little masala in between two buttered slices of bread.
Toast it using sandwich maker.
Ready to serve.

Dabeli Is the Rajesthani Dish.. Yes its origin is Ragesthaan...astonished???...yes i was also when i came to know..Coz its made up of Bread with a stuffing of Potato with sweet and spicy masalas ,groundnut and the very important pomogranate into it :)

You can get dabeli masalas in the market.But if you want you can make them at home.Fresh masalas..it takes little time

Ingredients

..500ml Milk
..2 tea spoon Custard Powder
..7 tea spn Sugar
..1/2 Tea spn Vanilla essence
..Fruit pieces like Chikku,apple,mango,strawberry,banana,Grapes,Orange,Sweet Lime
Pomgranate,papaya(optional),Musk Melon(Optional).

Procedure

1.. Heat up the milk in a pan.
2.. Take 1 tea spoon cold milk in a cup add custard powser mix well.Pour the paste into
Boiling Milk.
3.. Keep on stirring till milk becomes thick as per your need.
4.. Add sugar..let it dissolve.
5.. Add essence after cooling.Keep in a refrigerator to set.
6.. Cut all the fruits into small pieces.
7.. Add them into the milk base while serving.

Serve Chilled in glass transparent bowls..

2..Take ghee in a pan,Add cumin,chillies and sabudana,mix well
3..Add peanut powder.Cook for 10 min.Can close the lid of pan for some time.
4..Add salt,sugar.
5..Garnish with cilantro.

Serve hot with 2-3 drops of lemon juice on it n yogurt.

They are also known a Sabudanya che thallipeeth.One of my favourite dish which Gouri used to bring for me in the tiffin whenever i fast for Chaturthi.



Ingredients

..Leftover sabudana khichadi
..Chopped Onion
..Chopped cilantro
..peanut powder(Optional)
..Wheat flour
..Oil
..Salt
..Red chilly powder
..Cumin powder
..Water
..Sugar




Procedure

1..Take sabudana khichadi/soaked sabudana.
2..Add all spices
3..Add onions,cilantro,salt,sugar
4..Mix well,Add water n some flour.
5..Mash Homogeneously
6..Make cutlets n roast from both side (without oil).
7..Steam them by closing pan lid.

Note: If you want to make them for fast skip onions and wheat flour,Add more peanut powder.

Serve hot with dahee.

Ingredients

2 Bowl boiled potatoes mashed.Cook them in microwave
1 Fresh Coconut.
Sugar
Cumin Powder
Caschew
Kismis etc
Lemon juice
Cilantro
Salt
green chilly paste
bread crumb/rice powder/maida/araroat


For the outer cover

Procedure

1. Mash potatoes,add cumin powder,salt.Mix well.Make a thin flat cutlet.



Stuffing
Procedure

1..Coconut,lemon juice,salt,cilantro,chilly paste add together.Mix well.

now take the cutlet,put small ball of stuffing at center.wrap it up like a kachori.

Cover it up with bread crumb/rice powder/maida/araroat.

shallow fry in a pan with ghee or oil.

serve hot with coconut chutney.

F..Sabudana Wada(Photograph)


Ingredients

1 bowl sabudana
1 bowl bhagar aata
1 bowl boiled mashes potatoes
2 tsp green chilly paste
1/2 lemon
1 tsp cumin
1/2 tsp salt
Cilantro
1 tsp Sugar

Procedure

1. Soak sabudana in water for 2 hrs.
2. Drain extra water from sabudana,mix all ingredients homogeneously together.
3. Deep fry on a medium flame.

Note : You can add peanut powder, but for calorie conscious ppl i would suggest avoid them as they makes wadas more oily n heavy.

Serve hot with the following chutney.

Roast poha ,so that they become crispy.

Procedure

1..Take oul in a vessel.Add mustard,allow them to splutter.
2..Add green chilly,red chilly,garlic pieces,dhaana,cumin,feneel,daaliya ,peanuts
allow garlic to be brown in color.Add curry leaves n coconut chips.
3..Add turmeric.
4..take out the vessel from the hot plate.
5..Add roasted pohas into the tadka.Mix well
6..Allow them to cool.
7..Add salt,sugar,chaat masala later into it as per the taste.


Note : Can add crispy mamra/murmura/puffed rice into the chivda as well.

Chatpata Timepass Snacks.

Ingredients
..2 Bowl Mamra(murmura)
..1 Bowl Sev thick/thin.
..1 tbl spn finely chopped onion
..1 tbl spn finely chopped Tomatoes
..1 tbl spn finely chopped cilantro.
..1 tea spn green chilly sauce.
..1 tbl spn tamarin sauce.
..1 tea spn lemon juice.
..1 tea spn chaat masala
..salt
..1 tea spn finely chopped green chilly (optional)
..1 tbl spn plain Corn flakes.
..some masala potato chips.
..peanuts.

Procedure

Add all the ingredients.Mix well.Serve immediately before tha mamra gets too wait.

Note :- Can add boiled potato pieces.Leftover poha chivda or any leftover farsaan.

1..Soak poha into water.Immediately drain water and spread poha on to a seave.
2..Take oil in a pan. Add mustard.Allow them to splutter.Add green/red chilly.
3..Add onions,potatoes,green peas,peanuts.Stir till onion becomes golden brown.
4..Add turmeric.
5..Add poha, mix well.
6..Add hing,sugar salt.
7..Garnish with cilantro.Add 2-3 drops of lemon juice.Serve hot with coconut chutney.

Note :- It can be garnished with dry or fresh grated coconut also.
